Honey Balsamic-Glazed Chicken Breasts

I love chicken, my husband not so much so I am always looking for ways to cook it that are different and flavorful. This recipe is actually an adaptation  of  Balsamic-Glazed Chicken Breasts from Rachel vs. “The Kitchen”. I changed the brown sugar in her recipe to honey, added rosemary. I aslo changed the cooking method from grill to oven because of the time of the year, but during summer this is awesome on the grill.

 

Honey Balsamic-Glazed Chicken Breasts

Perfect amount of sweetness, my entire family loves this recipe.
Ingredients
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 1 tablespoon dried rosemary
  • 1 large garlic clove finely chopped
  • 4 bone-in skinless chicken breast halves
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
Instructions
  1. In a small bowl, combine the honey, vinegar, rosemary, and garlic . Pour half of the marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 2 hours. Cover and refrigerate for 2 hours. Cover and refrigerate remaining marinade.
  2. Drain and discard marinade from chicken. Place chicken bone side down in a 13-in. x 9-in. baking pan. Sprinkle with salt and pepper.
  3. Bake, uncovered, at 350° for 55-65 minutes or until a thermometer reaches 170°, basting occasionally with reserved marinade.
